Wellness Wednesday: Muffin Tin Tostadas
🥗 Healthy, quick, and fun to make—Muffin Tin Tostadas are perfect for busy weeknights or meal prep! 🌮 Here’s how to make them:
Ingredients:
6 small corn tortillas
1 cup cooked ground turkey or black beans
1 cup shredded cheese
1/2 cup diced tomatoes
1/2 cup shredded lettuce
1/4 cup salsa
1/4 cup sour cream or Greek yogurt
Optional: avocado, cilantro, jalapeños
Instructions:
1️⃣ Preheat oven to 375°F.
2️⃣ Warm tortillas slightly, then press them into muffin tin cups to form a bowl shape.
3️⃣ Fill each tortilla with protein (turkey or beans) and sprinkle with cheese.
4️⃣ Bake for 10-12 minutes, or until cheese melts and tortillas are crispy.
5️⃣ Top with lettuce, tomatoes, salsa, and any extras you love.
6️⃣ Enjoy your tostadas warm and fresh!
